Apple- Cinnamon Oat Bran Muffins


I know that most of us are wanting to get back into the routine of eating better. Along with the holidays comes eating sweets, eating more then normal, and eating foods we wouldn't normally eat. As I was thinking about this and setting a goal for myself these next couple of weeks, I decided I would give you a recipe that is pretty healthy and would be a good snack or breakfast.
So go ahead and give it try....


1/2 C oat bran
1 C whole-wheat flour
1/4 C ground flax seed
1 tsp. baking soda
1 tsp baking powder
1 tsp ground cinnamon
1 tsp nutmeg
1 egg, beaten
4 tbsp canola oil
1/4 C sugar
1/3 C applesauce         
1/4 C chopped pecans

Preheat oven to 350 degrees F.
In a large bowl, whisk together bran, flour, flaxseed, baking soda, baking powder, cinnamon, and nutmeg.
In a separate bowl, whisk together egg and oil until smooth. Stir in applesauce and sugar. Combine mixtures and fold in pecans.
Spoon batter into paper-lined muffin cups. Bake for 22 to 25 minutes or until tops spring back when lightly touched. Cool on a wire rack.

I stumbled across your blog this morning...it made my day. I love your recipes, crafts etc. I made the oat muffins today and they are very, very dry. Did I do something wrong? I double checked all measurements...

You probably didn't do anything wrong... It is just that when you have all that dry ingredient you might have a dry muffin. So I would do one of two things:
1st choice:
add 1 more egg and a total of 1/2 cup applesauce
2nd choice:
reduce your oat bran by half, and add 1/2 cup total applesauce.
I think that it doesn't call for enough liquid to begin with. You could always try adding up to a cup more applesauce.
If you like the taste just play around with the liquid part to get it the way you like.
Sorry they were dry...I will try another one that isn't as dry and post it.
