Waffle Goodness

Recently I have been accumulating some really great recipes and I am happy to share with you these yummy dishes and sweets.Not all in one day but week but week.
You know I love food and I love to eat so when I talk about food I light up and get really excited.  
 This morning I am going to share with you Banana Bread Waffles top with Banana Foster Sauce. Yup. You heard me right.
These things were inspired by our trip to the cape. They are out of this world yummy goodness. It’s a one-waffle-per-person kind of breakfast. Eat more than one and you’ll be waddling away from the table. Don’t say you weren’t warned. These babies are dense and heavy but oh-so-totally delicious. Let's just say these waffles are a much more interesting way to eat your banana bread. Topped with that Banana Foster syrup you are going to be in waffle heaven.



Waffle Ingredients
4 tablespoons unsalted butter, melted
1 cup plus 2 tablespoons milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 tablespoon dark brown sugar, packed
1 1/2 teaspoons yeast
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger
Pinch of ground clove
2 eggs, beaten lightly
1 cup mashed ripe banana, about 3 whole
2 tablespoons sour cream or greek yogurt

In a small bowl, whisk together the butter, milk and vanilla. Set aside, the mixture should be warm but not hot.
In a large mixing bowl, sift or whisk together the flour, brown sugar, yeast, salt and spices. Pour the wet ingredients into the dry, whisking until smooth. Stir in the beaten eggs. Cover the bowl loosely with cling-film and refrigerate for at least 12 hours, but up to 24.
About 30 minutes before you want to make waffles, take the batter out of the refrigerator to come up to room temperature slightly. It should be doubled in size and the surface will be covered in bubbles.
When ready to begin, stir the sour cream into the mashed bananas and then mix the banana mix into the batter. It will deflate, but use a light, quick hand to thoroughly combine.
Heat your waffle iron and bake the waffles as per the manufacturer's instruction.


Syrup Topping: 

1 stick butter
1/2 cup brown sugar
4 bananas peeled and halved, cut lengthwise
Rum Extract from the baking area. I wouldn't use but 1-2 tablespoons at the most. Just pour to taste.

 Melt butter in a large skillet. Add brown sugar and stir together. Add rum extract and mix. Add the bananas and cook until caramelized over medium-high heat. Then Serve.
Enjoy this yummy goodness.
Also.....
This morning words can not describe how thankful I am. I am not at liberty to discuss details but my husbands work has some changes going on and as of now he still has a job. So today I am very thankful.

Please pray for us and his job and that we continue to have strength through whatever God's plan is for us.

{Tell All Tuesday}

I must apologize to you all. I was fully expecting to have a post for the blog on Monday but one thing happened after another and before I knew it the day was over. But saying that.... I am back up and running today!
This past weekend was a blast. Florida definitely held true to the name, Sunshine State. It was really beautiful weather and we took advantage of it all weekend long.
Saturday was a special day for my husband and I because we celebrated our 6 year wedding anniversary. It has been an amazing 6 years and I look forward to the rest of our life together. It truly gets better all the time.
We also spent Saturday morning and afternoon having an Easter egg hunt/ party for our oldest son. It was so much fun watching him play with his friends and enjoy the gorgeous weather outside.
After enjoying the day outside we spent the evening with our two boys walking the Town Center and having a delicious meal under Maggiano's pergola.  The boys were fantastic and behaved like little angels (well, maybe I shouldn't take it that far but they did amaze us.)

While shopping I found these cute little dresses. Aren't they cute? I didn't get all of them, well actually I didn't get either because they both fit wrong. Don't you hate that? I did.

 I can not wait to get a chance to look through my pictures of the weekend and share some with you. As for tomorrow, I will share with you how to cook a quick and easy meal for your children this week while they are on spring break.

{Tell All Tuesday}

Why do I blog? 
I sometimes ask myself this question. 
It is no secret that being a wife and mom is hard work. For those of you who are one know exactly what I am talking about. But don't get me wrong,even though it is hard work, it is worth every minute!! Amen--
I have recently been asking myself this question more and more. 

Why does writing sometimes come easy and other times I can't seem to get it together? Is it because I  have SO much on my mind that I can not focus. I think sometimes it is and then other times I am all pooped out to have any energy to write or say another word. 

I honestly don't have all the time in the world. 
Blogging takes time. But so does raising two growing boys, who are only getting more rambunctious by this very moment.

So why do I blog? I blog because it helps me express moods and feelings. It helps get out ideas and topics that would just other wise, well....I guess go nowhere.
I blog because I love too. I blog so other women can be encouraged and see that they aren't alone in whatever they are going through.

And the list goes on.....

St. Patrick's Day Dishes


St. Patrick's Day is tomorrow and I had these excellent recipes. I am not one who makes a big deal about this day but since some of you might like to make an Irish dish, I found these just for you. They are all pretty good recipes so I had a hard time picking 1, so I gave you all 3. 

And... recipes always look better with pictures.

Irish Beef Hand Pies

Ingredients

Makes 8
  • 1 tablespoon vegetable oil
  • 1/4 head green cabbage, shredded
  • 1/2 pound red potatoes, scrubbed and diced
  • 1 pound ground beef sirloin
  • 3 tablespoons tomato paste
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • Coarse salt and ground pepper
  • All-purpose flour, for rolling
  • 2 pie crusts (9 inches each), homemade or store-bought

Directions

  1. Preheat oven to 400 degrees. In a medium saucepan, heat oil over medium; add cabbage and potatoes. Cook until beginning to brown, 7 to 9 minutes. Add beef; cook, breaking up meat with a spoon, until no longer pink, about 5 minutes. Stir in tomato paste, Worcestershire, thyme, and 1 cup water. Cover, and cook until potatoes are tender, about 15 minutes. Lightly mash mixture with a fork. Season with salt and pepper. Let cool completely.
  2. On a lightly floured work surface, roll each crust into a 14-inch square; cut each into 4 equal squares. Place 1/2 cup filling on one half of each square, leaving a 1/2-inch border around the filling. Brush borders with water; fold dough over filling to enclose. Crimp edges with a fork to seal. With a paring knife or scissors, cut 3 small vents in each.
  3. Transfer pies to 2 foil-lined rimmed baking sheets; bake until golden brown, 10 to 12 minutes, rotating sheets halfway through.
  4. To Freeze: Prepare through step 2. Arrange unbaked pies on a baking sheet (they should not touch); freeze until firm, about 1 hour. Wrap each pie in foil. Place in a resealable plastic bag; freeze up to 2 months.
  5. To Bake from Frozen: Proceed with step 3, increasing baking time to 28 to 30 minutes.


Irish Lime Squares 

Ingredients

Makes 16
  • FOR THE CRUST
  • 4 tablespoons (1/2 stick) unsalted butter, melted and cooled, plus more for pan
  • 2/3 cup shelled pistachios
  • 1 cup (4 ounces) graham-cracker crumbs
  • 1/4 cup sugar
  • 1 tablespoons grated lime zest
  • FOR THE FILLING
  • 2 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup fresh lime juice

Directions

  1. Preheat oven to 350 degrees. Brush an 8-inch square baking dish with melted butter. Line bottom with parchment paper, leaving a 2-inch overhang on two sides.
  2. In a food processor, finely grind pistachios with graham-cracker crumbs, sugar, and zest. Blend in butter. Press mixture into bottom and 1 inch up sides of prepared pan. Bake until lightly browned, 8 to 12 minutes. Cool crust, 30 minutes.
  3. To make the filling: In a large bowl, whisk together egg yolks and condensed milk. Add lime juice; whisk until smooth. Pour filling into cooled crust; carefully spread to edges.
  4. Bake until set, about 15 minutes. Cool in pan on rack; then chill at least 1 hour before serving. Using parchment paper overhang, lift out of pan, and transfer to a cutting board. With a serrated knife, cut into 16 squares, wiping knife with a damp kitchen towel between each cut. To store in refrigerator, cover with plastic wrap.

Irish Soda Bread

Ingredients

Serves 16
  • 3 tablespoons unsalted butter, melted, plus more for pan
  • 4 cups all-purpose flour, plus more for kneading
  • 3/4 cup sugar
  • 3/4 cup raisins
  • 2 tablespoons caraway seeds
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/2 cups buttermilk
  • 2 large eggs

Directions

  1. Preheat oven to 350 degrees. Butter a baking sheet. In a large bowl, combine flour, sugar, raisins, caraway seeds, baking soda, salt, and baking powder. In a separate bowl, whisk buttermilk, eggs, and 2 tablespoons butter. Stir the wet mixture into the dry ingredients to form a dough.
  2. Knead dough on a lightly floured surface until smooth, about 4 minutes; add more flour as needed to prevent sticking. Form dough into a 9-inch round; place on prepared baking sheet. Brush loaf with remaining tablespoon butter. Using a sharp knife, score an X on top of loaf.
  3. Bake until skewer inserted in center comes out clean, 45 to 50 minutes. Cool on wire rack before serving.

Q and A

Last Tuesday I posted a Q and A and didn't get any questions through the blog but I did get a couple through e-mail and blog frog. I also have had some questions along the way with this blog and thought I would share 5 of the questions with you today.

A.) How did you get the name Mommy Buzz?
 Well I am a mommy and I am VERY busy with two little ones. Call me crazy--but one day I was thinking of bees and how they are always working--Buzzing around. Then I was thinking about what woman do when we all get together. We talk, talk , talk. So I put the two together and hints the name Mommy Buzz. I know it's silly but until I think of something else I guess it will remain Mommy Buzz.

B.)How do you find time to blog and be a mom and wife?
It was much easier when I first started b/c my youngest wasn't mobile at the time and my oldest would nap.So I would do it during there nap time.But now that my oldest doesn't really nap anymore (well about 2 days a week) and my youngest is into everything, I try to write post during the evenings after they have gone to bed or when they are both laying down. I also work on post first thing in the morning before they are awake or while we eat breakfast. I try to spend as much time with them while they are awake b/c they are only young once.

C.)What is your favorite thing to cook?
Since I love desserts I would have to say sweet treats.

D.)What is your favorite thing about blogging?
Knowing that I am encouraging women and providing useful information along the way.

E.)Are you going to keep blogging?
I would like too. It does take alot of time but is so much fun. It is a great way to get the ideas out of my head and I honestly just love it.

{Tell All Tuesday}

"What Not To Wear"
My first reaction after reading this post was to delete it and start over but I decided to post it (obviously because you are reading it) but I hope to encourage some of you with this post.


We all have those pictures from the past that we look back at and wonder "What was I thinking";" What in the world was I doing with my hair"; " Why did I leave the house with that on"? 

Trends are fun at the time, but can later come back to haunt us. Think back a little bit (since most of us aren't that old) to a trend that we thought was cute but looking back wasn't so cute...
When I started thinking about the stuff I have that I am never going to wear again, I decided I was officially going to spring clean early. Well, my closets and drawers that is...

Join me this week and get rid of your old clothes. Don't keep your drawers/closets full of things you are not going to wear anymore.
Also, you can make some money by doing this!
Here's How:
Fi Fi's (which is a women's consignment store in Jacksonville) will except your lightly worn clothes, shoes, purses, etc and in return will pay you a percentage of the items they sell. 
Round Robin is another place that does the same thing but since I have never worked with (Round Robin) before I would recommend calling them to find out the details.
If you live somewhere other then Jacksonville check your local womens consignment stores to find out what season of clothes they are excepting and drop your items off with them.

 Let's get a jump start on that spring cleaning and start with our drawers and closets. It will make you feel pounds lighter, I promise!

Tell All Tuesday

Let's face it- we have all had our share of embarrassing moments. But sometimes it is funny and then other times it isn't. When you have children they are sure to embarrass you and there is NEVER a dull moment!

Yesterday was a beautiful day and after lunch I took the boys outside to play. We walked around the yard, played ball, went for a walk, and then decided to go to the park. Now the park is at the end of our street so it isn't to far to walk too but it is far enough where if you have to get home quick your out of luck!

So we are happily playing at the park and then all the sudden Ethan yells, " I have to go poo-poo." 
Then I asked, "Can you hold it and mommy will run you home?" I was thinking that I was about to do a mad dash home but instead my poor child couldn't hold it. 

I found myself telling him to quickly find a bush over in the woods and I grabbed Tucker up and headed that way. Thankfully it was a quick one but when he was done we headed home for a bath and a fresh change of clothes.

I did catch myself looking around to make sure no one saw us and I pray that no one did. 
 Can you believe I am writing about this?? I can't.... I am laughing at myself right now for telling you this story. 
But we did make it home and everything was fine.

So lesson learned--Ask your child if they have to go potty before you head to the park...

Tell All Tuesday

Cravings....
How many of you crave an afternoon snack?
How many of you crave something just in general?

I have gotten to where I need something sweet in the afternoon. Sometimes it is only 1 bite that I need and then other times I need something more. 

But what does this mean?
Well, I was doing some research on this because I want to stop this bad habit and wanted to tell you a little bit about it. 
You know, if you are having the same problem then we can fix it together.....

An enormous percentage of women crave sugar, or carbohydrates. In most cases, these food cravings are not true eating disorders, but instead are signs of hormonal imbalance caused by a lack of healthy nutrition.
 But you are saying to yourself, I think I eat really healthy.... or you feel that you do for the most part.
So what then....Keep eating healthy and exchange your sweet for fruit, and add a protien to it. 
Like for instance:
If you like banana's or apples add some peanut butter on the side.
You don't have to have alot of it b/c it is a high fat but it is a nut fat (healthy fat but eat in moderation.) Which is good for you as long as you are eating healthy peanut butter. 
Now I know your thinking 'healthy peanut butter.' Get your peanut butter freshly ground in the deli or find it on the PB aisle where it has nothing added to it but water and peanuts.
Your personal issue may be the afternoon snack (often chocolate or candy or a food that’s also heavy in carbohydrates), too many potato chips, or a hundred other variations. But the underlying mechanism, and the way to curb cravings, is the same. And it has nothing to do with willpower, or your lack thereof!
 Well it partly does....You have to choose to stop.
But it could also mean something else-
Food cravings mean that the body has its signals mixed up. For some women it is when they are pregnant and there body is going through tons of hormonal changes.Or when we are exhausted or blue, we have low blood sugar and/or low serotonin, and the body signals the brain that it needs a pick-me-up. This signal causes a sugar craving or carbohydrate craving.

And this is true, I even call it a pick-me-up....

But then I read this, 'If you eat a low-fat diet in the hope of losing weight, you unintentionally make the problem worse.'

So how do I fix it?
How to break this vicious cycle? To reduce food cravings, the body needs support — and lots of it. Changing your eating habits to healthy foods, adding a nutritional supplements and moderate exercise can almost miraculously curb cravings. Your metabolism will heal itself when provided with the necessary nutritional support.  The good news is — you don’t have to give up chocolate!

{Tell All Tuesday}

Snicker Doodles 
Last week my sister came over to visit and she brought me these yummy cookies, called Snicker Doodles. Then a friend came over later in the week and we made a batch of these for us to eat on...
They were great and I wanted to share the recipe with you all.
I hope you enjoy them as much as I did.
Ingredient:
2 3/4 cup flour
1 tsp baking soda
1/2 tsp salt
2 sticks butter (softened)
1 1/2 cup sugar + 3 Tbsp
2 large eggs
1 tbsp ground cinnamon

Directions:
Sift flour,soda, and salt in a small bowl.
Then in a separate bowl blend butter and sugar til fluffy. Add eggs 1 at a time. Then add flour, blend til smooth.(so now your mix is all in one bowl)
Mix 3 tbsp sugar with cinnamon in a small bowl. Roll dough into balls and roll into the cinnamon sugar.
Bake at 350 for 8-10 minutes
 .

~Tell All Tuesday~


How To Effectively Use Your Space


With budgets being tight these days for most people I thought this would be a great subject to write on. Aren't we always wanting to know how to better use the space we have?


So when I saw this picture it confirmed my thoughts.... I am going to share with you how to use your space effectively. 



When you look at your room and wonder how you will get anything else in the space then ask yourself this: "Do I have insufficient storage space or ineffective storage space?" 
Here is the difference:
Insufficient storage means you don't have enough space for your things. Ineffective space means you have enough space for your things, but you're not making the best use of that space. 

So before you begin reading the ideas below determine this first:
Do you have things you don't like, are outdated, etc., and need to get rid of or Are you storing things you enjoy, will use, and like.

Some Easy Ideas

1. ADD-A-ROD. Looking for extra storage space in your closet. If you have the type of closet with two+ walls for hanging clothes, on one wall, hang a rod at head height for long clothing (dresses, pants, etc.). On the other wall, hang two rods--one above the other--for shorter clothing (shirts, skirts, blazers, etc.)
In  my children's room I added a shelf for shoes and then to hang pants and shirts that can be reached.

2. INSTALL SHELVES. Most shelves can be moved up-a-notch or down-a-notch. If you have three inches of space above your linens, you may consider adjusting the shelf so the shelf below it has more space. Or, perhaps you can add another shelf in between. Plastic, multiple level shelves are wonderful for kitchen cabinets. 
3.USE STORAGE UNITS. Storage units, which can be picked up from housewares or hardware stores, and are great space savers. Your spices can be removed from drawers and placed on a spice rack. There are racks for canned goods. Some of these hold over 40 cans! There are coffee tables on the market with storage space hidden inside them as well. Under bed containers are perfect for storing quilts and linens. Be creative and make use of these great tools! 
4. DON'T FORGET ABOUT WALL SPACE. Look around and you're sure to find quite a bit of empty wall space. There are many uses for this new-found space.This is great for office items.Tools can be placed on pegboards. Shelves can be installed for picture frames and knick knacks. 
5. PUT FREQUENTLY USED ITEMS WITHIN ARMS REACH. Whenever possible, store regularly used items where you use them most. You shouldn't have to walk from one room to another to retrieve items you use every day.  
6. ADD-A-DRAWER OR SLIDING SHELF. Many hardware and housewares stores carry drawers that can be installed underneath a cabinet. These are great if you have a home with limited drawer space. In addition, you can also install shelves under cabinets that slide out when you need them, and slide back in when you're finished with them. 
7. KEEP YOUR DESK CLEAR. A clear desk is directly related to your productivity. You will get more done, if you're not constantly under a pile of papers and files. Make sure you have a filing cabinet for any home or office. Portable file boxes that hold hanging file folders also come in handy and can be stored easily in the closet. 
 8.REARRANGE. Everyone is different, and has different needs. Make your home or office work for you. 
If you have a space you love but aren't happy with the way you have your furniture then try rearranging to where it better fits your need. So think about your surroundings and make them work for you, even if they seem a little out of the ordinary. 
9. ROTATE. You may have many items you love in your home or office, but not enough space. Rotate them. Put some of the things you like the most out and storage the others, then switch after a few months.


So think outside the normal for you to create the best space possible.

{Tell All Tuesday}

 I have two things to share with you today:

The Recipes~
 A few years back I bought one of Paula Deen's Christmas Magazines...since it had some wonderful recipes in it, I thought it would be a great choice to add to my dessert collection.
That year, I did make the Key Lime Mouse Cheesecake and it was a huge hit.
I was told I should have made more... Well that made me feel good because I stayed up really late on Christmas Eve making it!
(actually I should add--my husband stayed up and helped me. What a great husband I have!)

 Then....

Last night as I was going through my recipes I ran across these two cheesecake recipes that I had made in the past. I decided that this Christmas I was going to make both of them again.

I took a picture of the cake in the magazine so you could see how yummy they really look!

Key Lime Mouse Cheesecake
White Chocolate Cranberry Cheesecake

White Chocolate Cranberry Cheesecake
1 (16-ounce) can whole berry cranberry sauce
2 cups graham cracker crumbs
1/4 cup sugar
6 tablespoons butter, melted
3 (8-ounce) packages cream cheese, softened
1 cup sugar
3 large eggs
1 (4-ounce) bar white chocolate, melted and cooled slightly
2 cups fresh cranberries (optional)
1/4 cup cranberry preserves, melted (optional)

In a small saucepan over medium-low heat, cook cranberry sauce, 35 minutes, stirring frequently, or until reduced to 1 cup. Cover and chill 2 hours.
Preheat oven to 350°F.
In a medium bowl, combine cracker crumbs, 1/4 cup sugar, and melted butter.
Press firmly on bottom and 1-inch up sides of a 9-inch springform pan. Bake 8 minutes.
In a large bowl, combine cream cheese and sugar. Beat with an electric mixer until fluffy. Beat in eggs, one at a time, beating well after each addition.
Stir in melted chocolate.
Spoon 1/2 of batter into prepared pan. Spread reduced cranberry sauce over batter. Top with remaining batter. Bake 45 minutes. Let cool completely on wire rack. Chill 8 hours before serving. Garnish with fresh cranberries, and brush with melted preserves, if desired. Cheesecake can be made ahead and frozen up to 1 month.
  
 Key Lime Mouse Cheesecake

Crust:
2 cups crushed graham crackers
1/4 cup sugar
1/2 cup (1 stick) butter, melted

Filling:
6 Tbs. fresh Key lime juice (can use bottled)
1 1/4-ounce package (1 envelope) unflavored gelatin
2 1/2 cups heavy cream, divided
10 (1 oz) squares white chocolate, chopped, plus 1-
1.5 oz, grated or shaved into curls
3 (8 oz) pkg. cream cheese, softened.
1 cup sugar
1/5 Tbs. lime zest

For crust, mix together cracker crumbs, sugar, and butter. Press into the bottom of a 10 in. spring-form pan and 1 in. up the sides. Set aside.

For filling, squeeze or pour lime juice into a bowl and sprinkle gelatin in to soften. Bring 1/2 cup heavy cream to a simmer in a saucepan, remove from heat and add 10 oz. white chocolate, stirring until smooth. Stir in gelatin and lime juice and allow to cool. Using an electric mixer, blend together cream cheese, sugar, and lime zest. Slowly beat cooled white chocolate mixture into cream cheese mixture. Using clean, dry beaters, beat remaining 2 cups heavy cream until it forms soft peaks. Fold into white chocolate mixture; then pour into pie crust. Cover and freeze overnight. Remove from freezer and run a sharp knife around inside of spring-form pan to help loosen cake. Release spring-form ring from pan, move cake to a serving plate, and grate or curl the 1-1.5 oz. white chocolate over cake. Cut into wedges with a knife that has been dipped into hot water.

{Tell All Tuesday}


Today's post is going to be pretty short. There is no rhyme or reason, I just  have 1 short idea for you today.....
